BOLGHERI ROSSO doc 2018
This wine is the expression of the vineyard (about 20 hectares) that I have planted in recent years with the “Bolgheri” project in mind, that is, the objective of enhancing the characteristics of this territory for a red of great character and pleasantness.
All the grapes are grown with ancient care and craftsmanship, in a high density vineyard (about 6000 plants / ha) where I take particular care of the natural balance of the vineyard. During the harvest, I manually pick the bunches when they are perfectly ripe and ferment without adding artificial yeasts, with pumping over or punching down. After 12 months of wood, the wine goes into the bottle and stays in the cellar for 6 months before being sold.
Vines: Sangiovese 30%, Cabernet Sauvignon 30%, Merlot 20%, Syrah 10%, Teroldego 10%
Harvest period: from early September (Merlot) to the first of October (Cabernet Sauvignon)
Vineyards: Torre, Vignanova, Poderini, Campastrello
Vinification: fermentation takes place in steel tanks using natural yeasts. Initially, two pumping over operations are carried out a day, which are subsequently reduced according to how the extraction proceeds. The same applies to the maceration time, estimated on the basis of frequent tastings. After the malolactic fermentation which naturally takes place in November, the various vinifications are assembled and refined.
Aging: 12 months, part in large oak barrels (30 hl), part in barriques of 3, 4 and 5 years.
