PIASTRAIA Bolgheri Superiore doc 2017
In ’91 I planted the first vineyard with Merlot, Cabernet Sauvignon, Sangiovese, Syrah, with the aim of satisfying both the affirmed great expression of the Bordeaux vines in Bolgheri, and the ability of all-Tuscan elegance of Sangiovese and the all-Mediterranean complexity of the Syrah. Since 2012 I have decided to use this wine with the mention Superiore because after almost 20 harvests of this label I am fully aware that the first intuition of a good blend represents the Bolgheri denomination.
Vines: Cabernet Sauvignon, Merlot, Syrah, Sangiovese
Harvest period: early September (Merlot) until the first of October (Cabernet Sauvignon)
Vineyards: Torre, Poderini, Vignanova, the Castagni, Campastrello
Vinification: each variety fermented separately in 30 hl truncated cone oak barrels. The yeasts are exclusively natural ones. Initially I carry out two punching down by hand every day, then only one. If necessary an open reassembly. With frequent tastings I carefully choose the moment of the svina (usually after about 20 days), from which the wine passes directly into barriques.
Aging: stop in French wood barrels with new woods for a fifth for a time between 18 and 24 months.
